Ingredients of Grape Focaccia

For the Focaccia Dough

  • 1 3/4 cups warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup olive oil

For the Topping

  • 2 cups red seedless grapes, halved
  • 2 tablespoons honey
  • 1 tablespoon rosemary, chopped
  • Coarse sea salt for sprinkling

Instructions

  1. In a small bowl, combine warm water, active dry yeast, and sugar. Let it sit for about 5-10 minutes, or until it becomes frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
  5. Preheat the oven to 400°F (200°C).
  6. Punch down the risen dough and transfer it to a parchment-lined baking sheet. Press the dough out to cover the sheet.
  7. Drizzle olive oil over the top of the dough and use your fingers to dimple the surface.
