- Measure out 4 cups of grape juice and pour it into a large saucepan. Add the sugar and pectin and stir to combine.
- Bring the mixture to a full rolling boil over high heat, stirring constantly. Boil for exactly 1 minute, then remove from the heat.
- Skim off any foam from the surface of the jelly.
- Pour the hot jelly into hot, sterilized jars, leaving 1/4 inch headspace at the top. Wipe the rims of the jars with a clean damp cloth and seal with lids.
- Process the jars in a boiling water bath for 10 minutes, adjusting for altitude.
- Remove the jars from the water bath and let cool completely on a wire rack.
Tips
- For a smoother jelly, strain the grape juice through a fine-mesh sieve before adding the sugar and pectin.
- To test if the jelly is done, place a small plate in the freezer for 5 minutes. Then, spoon a little bit of the jelly onto the cold plate. If the jelly wrinkles when you push it with your finger, it is ready.
- If you don’t have a jelly bag or cheesecloth, you can strain the grape juice through a colander lined with several layers of paper towels.
